@schlink https://www.rhodiapads.com/ rhodia paper is my go-to. The feel is great on the hand. The paper can handle whatever ink you want, even fountain pens. There's a variety of styles and they're pretty cheap.
@schlink those books are fantastic to write in. If you're really concerned about it staying open, the spiral ones are probably the best. They hold together well and often have perforated pages.

But it's... weirdly ugly? Also I think I have a slight preference for soft covers.
