@encelado interesting article, though I must say the "limitations" section was the most convincing to me ^^"
my personal experience make me rather skeptical that cognitive disonance would be a major player here... I suspect that habit and perceived/imagined issues with plant-based diets are the main issue (people don't know how to cook, this it takes time, does not taste good, is bad for their health...)
I expect that making plant-based recipes and meals easily available would be most effective
